A unique twist on the classic summer service. These Rhubarb and Bramble Gin ice lollies are the perfect grown up treat to keep cool on long hot summer days. We're still waiting for those sorts of days to appear here in Shetland, but that's not to say we still can't enjoy a gin ice lolly.
Simple and quick to make, you'll need the following ingredients to make six ice lollies:
- 100ml Shetland Reel Rhubarb and Bramble Gin Liqueur
- Two bottles of premium lemonade such as Fever Tree
- A handful of berries such as brambles and raspberries
Combine all the ingredients into a jug and stir until the lemonade looses its fizz. Add a few berries to each of the ice lolly moulds and then pour in the mixture. Freeze for a minimum of four hours or overnight.
And if you've got some left over, you've made the perfect summer spritz - simply add a spot of ice and enjoy!
