30ml Pink Grapefruit Juice
10ml Simple Syrup
15ml Lemon Juice
6-8 Mint Leaves
Place all ingredients in a Boston shaker and shake. Pour into glass filled with ice and top up with soda -garnish with grapefruit rind and mint sprig.
**To make the chai syrup combine 300ml water with 200ml sugar and stir to dissolve over a medium heat. Once dissolved add one chai tea bag and turn off the heat. Let it infuse for 10/15 minutes and discard the tea bag. Let it chill at room temperature and store in a sealed container in the fridge for up to a week.
