We’re flipping crazy about pancakes and even more so when they feature gin!
Pancake Day is almost upon us and we have the perfect recipe for a ginspired pancake night. Out with the traditional lemons and in with the Simmer Gin – a new twist on a traditional favourite.
Here is all you need to make our Gin and Tonic Pancakes:
Ingredients
Pancake Ingredients:
- 200g Self Raising Flour
- 200ml of Tonic Water
- 50ml of Shetland Reel Simmer Gin
- 50ml of Milk
- 1 Egg
Syrup ingredients:
- Juice of 2 oranges
- 4 tablespoons of Shetland Reel Simmer Gin
- 4 tablespoons of granulated sugar
To make the pancakes
To make the pancakes, combine the self-raising flour, tonic water, gin, milk and egg into a large mixing bowl – whisk until smooth and set aside.
Lightly oil a non-stick pan using either butter or coconut oil. Add 1-2 tablespoons of the pancake mixture to the pan and cook for approximately 1-2 minutes on each side until they are nicely brown in colour.
To make the Syrup:
Add the sugar, gin and orange juice into a saucepan and boil on a high heat for several minutes. Once the syrup has a thick consistency, take it off the heat and set aside to cool.
Stack the pancakes onto a plate, drizzle with the gin syrup and accompany with a large G&T and great company.
